Salad Ingredients
  • 4 medium carrots peeled and sliced into ribbons
  • 1 cup cucumber thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
  • 1 tablespoon sesame seeds toasted
Vinaigrette
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard

Method
 

Prepare the Salad
  1. Using a vegetable peeler, slice the carrots into thin ribbons and place them in a mixing bowl.
  2. Add the sliced cucumber, chopped parsley, chopped mint, and toasted sesame seeds to the bowl.
Make the Vinaigrette
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Combine and Serve
  1. Pour the vinaigrette over the salad and toss gently to combine. Serve immediately.
