Carnitas

Ingredients
  

Pork
  • 3 pounds pork shoulder cut into large chunks
Spices
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon cumin
  • 1 tablespoon oregano
  • 1 teaspoon cayenne pepper optional for heat
Aromatics
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 oranges juiced
  • 1 cup chicken broth
For Serving
  • 8 small corn tortillas
  • 1 cup cilantro chopped
  • 1 lime cut into wedges

Method
 

Prepare the Pork
  1. In a bowl, mix together salt, black pepper, cumin, oregano, and cayenne pepper. Rub the spice mixture all over the pork chunks.
  2. Place the pork in the slow cooker.
Add Aromatics
  1. Add chopped onion, minced garlic, orange juice, and chicken broth to the slow cooker.
Cook
  1. Cover and cook on low for 6-8 hours or until the pork is tender and easily shredded.
Shred the Pork
  1. Remove the pork from the slow cooker and shred it using two forks.
  2. Optional: Heat a skillet over medium-high heat and add the shredded pork to crisp it up.
Serve
  1. Serve the carnitas in warm corn tortillas, topped with chopped cilantro and lime wedges.

Notes

Carnitas can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat before serving.
