Ingredients
  

Tofu Preparation
  • 1 lb super firm tofu block
  • 1.5 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tbsp sesame seeds
  • 1.5 tbsp avocado oil for frying
Broth Ingredients
  • 2 tsp avocado oil for sautéing
  • 0.5 medium yellow onion
  • 4 slices fresh ginger root thin
  • 5 cloves garlic thinly sliced
  • 1 medium Fresno pepper thinly sliced
  • 3 scallions thinly sliced with white and green ends separated
  • 3 dried shiitake mushrooms
  • 4.5 cups hot water
  • 2-3 tbsp yellow miso paste
  • 2 tsp sesame oil plus more for serving
  • 0.5 medium lemon juice and zest of half
  • Kosher salt as needed
  • Cooked rice for serving

Method
 

Preparation and Cooking
  1. Press and cube the tofu, then marinate it in a mixture of tamari, rice vinegar, and cornstarch.
  2. Heat 1.5 tbsp of avocado oil in a pan over medium-high heat and add the marinated tofu. Cook until crispy, then set aside.
  3. In the same pan, add the remaining avocado oil and sauté the yellow onion, ginger, garlic, and Fresno pepper until fragrant.
  4. Add the dried shiitake mushrooms and hot water to the pan, bringing it to a simmer.
  5. Stir in the yellow miso paste until dissolved.
  6. Add sesame oil and the lemon juice and zest. Season with kosher salt to taste.
  7. Serve the broth over cooked rice and top with crispy tofu and sliced scallions.
