Ingredients
  

Cake Batter
  • 1 cup sour cream
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries or frozen, thawed
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/4 cup unsalted butter cold and cubed
  • 1 teaspoon cinnamon

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the blueberries.
Make the Streusel Topping
  1. In a small bowl, mix together the flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
Bake the Cake
  1. Pour the batter into the prepared cake pan and sprinkle the streusel topping evenly over the top.
  2. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
