Ingredients
  

Eggplant Layer
  • 2 medium eggplants sliced into 1/2 inch rounds
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 2 cups bread crumbs preferably Italian seasoned
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Sauce and Toppings
  • 3 cups marinara sauce store-bought or homemade
  • 2 cups mozzarella cheese shredded
  • 1 cup parmesan cheese grated
  • 1 tablespoon olive oil for drizzling
  • 1 tablespoon fresh basil chopped, for garnish

Method
 

Prepare the Eggplant
  1. Preheat the oven to 375°F (190°C). Slice the eggplants and sprinkle with salt. Let them sit for 15 minutes to draw out moisture, then pat dry.
  2. Set up a dredging station with flour, beaten eggs, and bread crumbs in separate shallow dishes.
  3. Dip each eggplant slice in flour, then egg, and finally coat with bread crumbs. Place on a baking sheet.
Bake the Eggplant
  1. Bake the breaded eggplant slices in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown.
Assemble the Dish
  1. In a baking dish, spread a layer of marinara sauce, then add a layer of baked eggplant slices. Sprinkle with mozzarella and parmesan cheese. Repeat layers, finishing with cheese on top.
  2. Drizzle with olive oil and cover with foil. Bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
Serve
  1. Remove from oven, let cool for a few minutes, then garnish with fresh basil before serving.

Notes

For a healthier version, you can grill the eggplant slices instead of baking them.
